The skinless chap is apparently St. Bartholomew. Artist: Damien Hirst.

I like the skeleton the best.
It still amazes me that these sculptures ( and many more ) are on display in a Church Of England cathedral! But the powers-that-be at Gloucester Cathedral did allow filming for a couple of Harry Potter movies on its grounds, so they must be more broad-minded than most.
